Green Bean Bundles

This is one of my favorite Thanksgiving/Christmas Dinner sides.  
The best part is that's it's sooo easy!  You can make 'em in a cast iron skillet, or better, in the oven.  Try 'em!  Just make sure you make enough 'cause they go really fast!

You'll Need:

Fresh green beans
Bacon (each strip cut in half)
Olive Oil or Parchment Paper

(Oven set to 325 degrees)
  1. Drizzle a little olive oil on cookie sheet to avoid sticking OR use parchment paper.
  2. Take a bundle of green beans and wrap them in a piece of bacon.
  3. Place green bean bundles on the cookie sheet, the overlapping side of bacon face down.
  4. Repeat steps 1 & 2 until cookie sheet is covered (try to leave space between bundles so they can cook on all sides).  Sprinkle with fresh ground pepper.*
  5. Place cookie sheet in oven and let cook for about 20+ minutes...until bacon looks cooked.
  6. Put cookie sheet in broiler (this'll get 'em crispy - mmm mmm) and watch very closely for about 2+ minutes (be careful that they don't burn!)
  7. Pat them with a paper towel to remove excess grease and serve.
*For an exciting twist, my friend Heather replaces the pepper with brown sugar!  Mmm!
