Breakfast Burritos

Tedd & I love breakfast burritos.

Stir-fry is on the menu several times a week b/c it means taking leftovers and turning them into something magically delicious!  (or at least that's how we feel about it).  And because we're so crazy about stir-fry, this exciting form of cooking carries over into breakfast-time as well.

Disclaimer!  I'm not very exact with measurements when it comes to stir-fry, so you'll have to use your good cooking-&-tastebud-judgement, adding/subtracting as you like.

I'll probably be sharing several brkfast burritos with you as time goes on, but here's the first, and I'm sure you won't be disappointed!

Potato/Egg Breakfast Burritos (makes 2 big'ns):

You'll need:
approx 1T real butter
small onion (sliced into thin strips)
small sweet potato (or regular potato)
spices: pepper, seasoned salt, 1T seasoned breadcrumbs
4 eggs whisked

Over med heat, melt butter and add your onion strips

mmm...caramelized onions (this makes every stir fry taste yummy I think)

When they start to brown (caramelize) nicely like so, shred your potato into the pan, then add breadcrumbs.

When potato is cooked through (won't take long), add whisked eggs to pan along with the seasonings and scramble the eggs

Take your tortillas and fill'em up with the mixture (Cheese is optional at this point) Wrap'em like burritos and you're ready to eat!  Yum yum.

Make the stir-fry mix ahead (freeze or store in fridge), heat it up the morning-of, wrapped in tortillas, then wrap burritos in foil and send it to go!
