Delicious Leftover Turkey Wrap

This was soooo yummy.  Sorry I don't have pictures, but I really think you'll love this if you try it!

(Makes 2 big wraps; Takes 30 min or less)

1+ T butter (real butter)
Half an onion - thin sliced 
Leftover cooked turkey (about 2 cups) torn into smallish pieces

about 1 T Cumin powder 
pepper to taste
seasoned salt to taste (I used about a teaspoon)
1/4c cheddar/mozzarella cheese (or both!)
handful of fresh cilantro - minced

2 wraps (tortillas, lavash, etc...pitas would work too)
mayo
lettuce

  1. Heat up a cast iron skillet or regular pan (med. heat) and throw in your butter.
  2. When the butter has melted, throw in your thinly sliced onions (you're going to carmelize them a bit...mmmmm!)  - they should sizzle; stir sparingly and cook for about 5 minutes or until the onions are browning
  3. Throw in your cooked turkey pieces to let them heat up and brown (they'll get crispy on the outside too...yummy!)
  4. When your onions are brown and soft, add your spices to the pan (cumin, s.salt, pepper) and the cilantro...stir about 30 seconds.
  5. Now test a piece of meat to see if you want to add more spice - adjust accordingly :-)
  6. If you're satisfied with your seasonings, grate your cheese into the pan, on top of your meat mixture and stir until cheese is melted.  (If you have a non-stick surface, you can let the cheese cook on the pan a little while to get it crispy - it tastes delicious!)
  7. Prep your wraps on a plate with lettuce, mayo, a little cilantro, and whatever other veggies you'd like  (tomato would be great I'm sure)
  8. Scoop out your turkey mixture into the wraps and then wrap'em up!  Smell, thank God for providing food (optional), and eat up!
