Mint Raita

This is so delicious on top of spicy Indian food!

2 c. plain (unsweetened) yogurt
handful of fresh mint leaves (rinsed)
1t. cumin seeds (dry roasted)
shredded (peeled) cucumber - optional
pinch of salt


In a little blender (Magic Bullet is great for this) or food processor, blend yogurt, mint, and cumin together until seeds are no longer intact.  Add salt and cucumber and serve!

Cool refreshing raita, mmmm mmmm!
