Also works great over tortilla chips for nachos!
Cook 1lb ground turkey (you can also substitute with beef or venison), 1 large onion (chopped), 1/2 a bell pepper (chopped), and 1/2 a jalapeno (optional) in about 4T of regular olive oil. Add about a tablespoon of whole cumin seeds as well (if you don't have seeds, use ground cumin, but don't add it just yet).
After the meat is browned, add in about 2 cups of beans (I'd recommend black, red, or kidney).
*note: if you choose to omit the beans from this recipe, go a little less on the seasonings below
Once the onion is translucent, add in 1 teaspoon ground cumin (add a tablespoon if you didn't have the seeds) and 3 cloves of garlic (minced).
And 'you ready to start dashing? Dash some chili powder, paprika, and oregano (about 2 dashes each), then give one good dash of cinnamon. Add about 1 1/2 teaspoons of brown sugar (trust me - if you look at taco seasoning packets, it probably has sugar listed in the ingredients).
Add salt & pepper to taste.
When the meat is cooked through and everything is well-blended, you can remove from the heat & start filling your tacos with all the fixins! Yummy!

Our favorite topping for tacos (and chili too!) is a basic mixture of sour cream with fresh cilantro. Just mix a handful of cilantro into a cup or so of sour cream and voila. It's easy and so so delicious.
But, if you wanna get a little fancier...
Cilantro Cream Sauce:
In a food processor (or a sweet magic bullet!), add 1 clove of garlic, 1cup heavy whipping cream, 2 generous handfuls (or more!) of fresh cilantro, a pinch of salt, and some raw jalapeno if you dare (I added a 1/4 of a jalapeno and the sauce came out medium-mild). Blend together well - cream should solidify a little, becoming a soupier version of whipped cream.
(Warning: you may have garlic breath - but who cares? isn't garlic worth it?)
