Homemade Granola Bars

This recipe is adapted from this recipe.

Ingredients:
4 c rolled oats
1 c rice crispies
1 c flour
2 T wheat germ
1 t baking soda
1 t vanilla
2/3 c butter
3/4 c honey
1/4 c brown sugar
1 c chocolate chips
1/2 c of unsweetened coconut
Directions:
Preheat oven to 325.

With a mixer/beater, combine vanilla, butter, honey, and brown sugar until everything is well-combined.  

In a separate bowl, whisk together the oats, rice crispies, flour, wheat germ, and baking soda.  Then add the dry ingredients into the sugar mixture and mix together until completely combined.

Gently stir in the chocolate chips and the coconut.  

Press the mixture into a glass casserole dish (9x13 will work).  Bake for about 18-22 minutes and remove from oven to let them cool.  Once they've cooled down, you can slice them into bars and serve.  

I wrapped the granola bars individually in plastic wrap and stuck them in the fridge for quick snacks.  They keep well for at least a week in the fridge.
