Menu in Review (#2)

In our season of life, our meals are usually made with our toddlers in mind (1 & 3).  While it is our goal to have them eat almost anything we would eat, I still try to make food that the kids can physically pick up and maneuver without a lot of trouble (so no soup, unless it's stuffed with rice, for example), and food that will be appealing to them.

If you're also working your weekly meals around toddler palettes, please share some of your recipe ideas!

Lunch w/ My Family: Baked Cod & Veggies
My mom wrapped frozen veggies and cod filets inside of wax-lined foil, then baked it in the oven.  We each chose our seasonings to put inside the packets

Delicious and fun!

For dinner: Beef & Black Bean Stuffed Peppers w/ Honey-Garlic Carrots & Potatoes

Pigs in a Blanket w/ Cheesy Stir-Fried Veggies
I use no-nitrate hot dogs, but other than that, they are hot dogs wrapped in crescent rolls and baked to golden brown.  They are super easy for busy nights and a sure-fire kid-pleaser.  The key to getting my kids to eat stir-fried veggies is to chop them very finely so that it's easy to munch and they can't "see" the onions or mushrooms.  Putting some shredded cheese on top doesn't hurt either!

Lunch: Tuna Fish "Rainbow" Salad

Dinner: Asian-Style Cabbage Rolls w/ Ground Turkey

"Lazy Lasagna" (Pasta Bake)
This was just whole wheat elbow macaroni layered with lasagna ingredients.  I added lots of finely diced sautéed veggies (like mushrooms, broccoli, and peppers) & pureed beets with the ricotta for added vitamins and a fun hot-pink color (toddler approved).

Lunch: Quesadillas w/ Fixin's
Dinner: Leftovers

Pecan-Crusted Salmon with Parmesan Roasted Broccoli & Couscous
I subbed plain yogurt for the mustard; this salmon recipe was a winner in my book!  The kids loved it because of the sweetness the honey adds to it.
