Perfect Strawberry-Mint Lemonade for Summer

There's something about cold fresh-squeezed lemonade that makes summer feel official!

With strawberries and mint added in, (and having a gallon of it chilled in the fridge), I can hardly refrain myself from going back for more again and again!

Here's the quick and easy recipe:

  • 1 cup of fresh-squeezed lemon juice (about 6 lemons)
  • Half a dozen stemmed sweet red strawberries (more/less according to your taste)
  • 3/4 cup simple syrup
  • A handful of fresh mint (optional & according to your taste)
  • Enough cold water to fill your pitcher (I use a 1 gal. pitcher)
In a blender, puree the strawberries, fresh mint leaves, and lemon juice until liquefied.  Pour the mixture into the bottom of your pitcher, add the 3/4 cup simple syrup (more/less as you like), and slowly fill your pitcher with water (I say slowly to avoid bubbles foaming up on top).  Stir with a wooden spoon, chill, and sip away!

Notes: 

This recipe leaves the tiny bits of strawberries and mint in the lemonade, but if you want, you can pour the blender mixture through a sieve into the pitcher for a "pulp-free" liquid.

You can also double or triple the simple syrup recipe to keep in the fridge for extra batches later on.
